Changes to Handout once created
It would be nice to have the ability to edit a handout page once created... sometimes even teachers make mistakes! If I delete the page and recreate the handout page I will also lose student progress thus far...
You can now edit converted Handout and Workspace activities in edit mode. Note that if you have delivered the activity and captured student data, the student data will have to be reset to enable editing. You can make a copy of your lesson to back up the data prior to editing the activity.

I've been searching all day to see if this was possible. I thought I was missing something. The ability to "undo" a handout and/or edit a slide at any time would help immensely.

I have found that I can edit a handout during the first editing of a lesson. Once it is turned into a handout the only option is to preview. If you have not yet clicked "finish editing" for the lesson, you can use the undo arrow in the top right to undo the handout and continue working on it. BUT...once you have finished editing there is no longer an option to undo the handout feature on a slide. An "undo handout" or "turn off handout" would be very helpful and save a lot of re-doing and backtracking to fix something.

I agree! If I decide to re-use that page and want to use it in another way - all I can do is take a screen clip of it and insert it as an image to re-create the page.
Maybe even a way to have a "add a copy as a handout or workspace" so I can hang onto the original page just in case I want to make edits.
