If your notebook software allows customization, check the preferences or default tool settings. Many apps let you set a default pen thickness and color so every new page starts with your preferred style. Sometimes it’s under Pen Settings, Tool Defaults, or even Template options. Interestingly, this kind of default control reminds me of how slicer software works in 3D printing. In Orca Slicer, you can save preset profiles for layer height, temperature, and colors (in previews), so every new project loads your preferred configuration automatically. If you’re curious how preset profiles work, I found this guide helpful https://orcaslicer.pro. Maybe your notebook app has a similar preset feature you can enable.
